As the name amply suggests, Trapani-style pesto originated in the western Sicilian city of the same name, and is thought to be a reworking of the Genoese agliata that some Ligurian sailors introduced to the people of Trapani during their port stops. The Trapanians used the area's tomatoes and almonds by pounding them in a mortarium, resulting in a raw sauce that has become characteristic of the area. Pesto alla Trapanese Giù Giù is prepared as you would make it, with no added dyes or preservatives: only excellent raw materials and the intense scent of summer.
