Spumante Extra Brut Sicilia DOP BIO - A union of four different crus of grillo. Pleasant notes of citrus, melon and green tea. Vibrant, mineral and slightly savoury on the palate, accompanying an elegant and persistent bubble.
ETNA BIANCO comes from Carricante, a white grape variety whose name seems to be attributable to the abundant quantities that the 'loaded' plant is able to produce. The bunch is medium-sized and the berries very full-bodied. Carricante is generally straw yellow in colour, with greenish reflections, and produces elegant, classy whites with a distinct minerality and sapidity. The nose is persistent, with fresh notes of white fruit, aromatic herbs, flint and grapefruit. Pure and refined, it is a fresh wine on the palate, with high acidity and a pleasant savoury finish, and the presence of minerals makes it fresh and delicate. It generally has good structure and longevity, which gives the wine complexity and smoothness. Ideal in combination with all types of fish, especially shellfish and smoked fish.
Spumante Extra Brut Sicilia DOP BIO Soft pressing and fermentation in steel for 15 days at a temperature of 16-18 °C. Maturation in bottle for 30 days.

Vinification and Ageing: Cold maceration in reduction. Resting on yeasts and ageing for at least 180 days in autoclave.
Serving suggestions: Perfect with battered vegetables and fish, sautè of mussels or clams, sarde a beccafico or in meatballs. Wonderful with seafood first courses such as tonnarelli with sea urchins and busiate courgette and red prawns. Excellent with breaded fish fillets and fried paranza fish. Try it with panelle and crocchè sandwiches.
