Etna Bianco comes from Carricante, a white grape variety whose name meaning seems to be attributable to the abundant quantities that the "loaded" plant is capable of producing. The cluster is medium-sized and the berries very full-bodied. Carricante is generally straw-yellow in color, with greenish highlights, and produces elegant, classy whites with a distinct minerality and sapidity. The nose is persistent, with fresh notes of white fruit, herbs, flint and grapefruit. Pure and refined, it is a fresh wine on the palate, with high acidity and a pleasant savory finish, and the presence of minerals makes it fresh and delicate. It generally has good structure and longevity, which gives the wine complexity and smoothness. Ideal paired with all kinds of fish, especially shellfish and smoked foods.
