Vinification and Aging: Cold maceration in reduction. Resting on the lees and aging for at least 20 days in autoclave.

Wine pairings: Antipasti, delicate first and second courses. Aperitifs with raw vegetables, dried fruits, delicate cheeses, cured meats such as cooked ham and mortadella. Perfect with Sushi, risottos or pasta with zucchini or squash, white meats and raw or grilled, steamed, stewed and marinated fish.
