Vinification and Aging: Cold maceration in reduction. Resting on the lees and aging for at least 30 days in autoclave.

Wine pairings: Fish and vegetable starters, such as cherry tomatoes and grouper, seafood risotto, zucchini and shrimp. Excellent with tempuraed shellfish and battered vegetables, arancine with meat or butter, and various fried foods. Perfect with aged cheeses and cured meats, such as grana and prosciutto. Try it with mortadella, pistachio and burrata pizza.
