Vinification and Aging: Cold maceration in reduction. Resting on the lees and aging for at least 30 days in autoclave.

Wine pairings: Crudités and marinated fish and shellfish, octopus salad, fish or vegetable cous cous. Ideal with fish pasta dishes such as spaghetti with bottarga or swordfish, eggplant and mint. Perfect with salmon slice, grilled or baked swordfish, chicken or turkey strips with lemon or mint.
