Vinification and Aging: Cold maceration in reduction. Resting on the lees and aging for at least 180 days in autoclave.

Wonderful with seafood first courses such as tonnarelli with sea urchins and busiate zucchini and red shrimp. Excellent with breaded fish fillets and fried paranza. Try it with panelle sandwich and crocchè.
