Vinification and Aging: Cold maceration in reduction. Resting on the lees and aging for at least 180 days in autoclave.
Wine pairings: Ideal as an aperitif with spiced and flavored cured meats and sausages, medium-aged cheeses. Excellent with tuna tartare or tagliata, seafood salad, pasta with squid ink. Excellent with eggplant parmigiana, rump steak tartare and beef tagliata. Try it with the spleen sandwich.
