A crispy casket of short pastry holds a soft heart of sheep's milk ricotta. Our bakery, with the wisdom used in the choice of ingredients and methods of preparation, preserves the authentic taste of this extraordinary cake. Each step in the preparation of this cake is fundamental: the preparation and baking of the shortbread, which must be soft but at the same time crunchy, the "working" of the ricotta, which must not be too sweet, and the sprinkling of cinnamon, never excessive.
