Almond cookies, commonly called Lenten cookies are crunchy cookies with toasted almonds inside. Cookies with very ancient origins, they are said to have been created by Sicilian monks during the Lenten period: during this period it was forbidden to eat meat, so the monks invented the recipe for these cookies, whose ingredients are vegetable products, as an alternative to this ban. Also called Grandma's Cookies, because during the Easter season families would gather in their grandparents' house to spend whole days kneading and baking cookies, to be all together in joy and harmony.
